Restaurant chain founder shares road to Singaporean culinary success in Vietnam

Harry Ang has built a restaurant chain 6-stall strong since 2006 with nothing but his love for his country’s cuisine.

Customers who visit a Singaporean restaurant on Le Anh Xuan Street in District 1, Ho Chi Minh City, will find it easy to spot a middle-aged man, who is quick on his feet and always dashing around the restaurant with a smile on his face. He is Harry Ang, founder of Lion City, a Singaporean restaurant chain.

It's been five years since he moved to Vietnam, when the Singaporean architect decided to take a shot at the culinary arts in 2006. It was a time when fast food brands and Western and Japanese restaurants were flourishing in HCMC. However, at that time, it was difficult to find a place that sold Singaporean dishes in the city, so Ang decided to open a frog porridge food stall.

“If you want to do something, no one can stop you. If you don’t want to do something, no one can help you,” said Ang, while noting that his career was launched by his love for Singaporean food and 36 years worth of culinary knowledge and experience in his home country.

With his experience in designing eateries, Harry Ang upgraded his frog porridge food stall in HCMC’s District 1 into a 70-seat restaurant in just a year after seeing how his customer base has grown.

In 2009, he opened two more restaurants and officially adopted the brand name Lion City. That was also the year when he mastered four staple dishes for his restaurants: frog porridge, chili-crab, fish-head curry and the Samba sauce. Currently, dishes made from crab and frog account for 35 percent of the chain’s total revenue.

Ang now has six restaurants in HCMC, Hanoi and Can Tho, and later this month, he will open a seventh restaurant in Kuala Lumpur, Malaysia. His business in Vietnam is going well, he said.

To ensure equal food quality in all his restaurants, fundamental sauces are all created in a central kitchen, before being delivered to individual restaurants.

Once the chain expands to 20 restaurants, Ang plans to build farms to supply more ingredients for his restaurants.

He said that while Japanese, Thai and Vietnamese restaurants are sprouting up all over the world, the number of Singaporean restaurants is still low. That’s why he wants to push his brand even further.

“For me, there are two things vital to success: experience and perseverance. I’ve cooked frog porridge for 30 years now, so I’ve learned a lot. Life is short, you know. It would be a waste to stop all this now,” Ang said.

Ho Chi Minh City police capture two alleged motorbike thieves who murdered Samaritans

The suspects were nabbed on Monday and have admitted to fatally attacking the ‘street guardians’

Police in Ho Chi Minh City have arrested two prime suspects who killed and injured five ‘street knights’ on Sunday night.

Officers from the municipal Department of Police on Monday apprehended Nguyen Tan Tai, 24, and Nguyen Hoang Chau Phu, 24, for allegedly stabbing to death two members of an unofficial ‘street guardian’ group and wounded three others.

Investigators first summoned Phu on Monday afternoon and later discovered his connections with Tai.

Dozens of officers arrived at a house in Go Vap District on Monday night to arrest Tai, who attempted to escape but was eventually captured.

At the police station, the two suspects admitted to attacking the ‘street knights’ with their knives.

According to the case file, two motorbike thieves were trying to steal an Honda SH scooter in front of a house on Cach Mang Thang 8 Street in District 3 on Sunday night when they were detected by a team of seven ‘street guardians.’

After being besieged by the ‘street knights,’ the criminals took out their weapons to aggressively fight back, inflicting serious injuries on five of the ‘street knights,’ who were later admitted to the hospital for emergency treatment.

As they are not recognized as authorized law enforcement officers, all ‘street guardians’ are not allowed to be armed for their own protection.

Nguyen Hoang Nam, 29, a Ho Chi Minh City resident, and 42-year-old Nguyen Van Thoi, hailing from the south-central province of Binh Dinh, succumbed to their stab wounds.

Tran Van Hoang, 47, Nguyen Duc Huy, 22, and Dinh Phu Quy, 22, are still being intensively treated at the hospital.

On Monday afternoon, Thoi’s body was handed to his wife, son, and older brother to prepare for funeral rituals in his hometown.

Thoi was renting a house in Tan Binh District and working as a motorbike taxi driver. He had been a member of the guardian group for nearly seven years.

Nam’s mother and fiancée also received his body on the same day.

He was a truck driver by day and a ‘street knight’ by night, having been in the team for the past three years.

Secretary of the municipal Party Committee Nguyen Thien Nhan and a delegation of officials have visited the injured ‘street knights’ at the hospital.

Errmmm you too nice liao, cockroaches are nasty insects that spread diseases, smells like shit and make a farking nuisance of themselves in everywhere they infest...... and if you are a fan of documentaries & scientific facts, they can even survive for many hours after having their heads cut off

Even tho I would have love to suppork a fellow Sinkie, but unfortunately I have tried 2 signature dishes at the insistence of Chai Tao James Bond last time, find out really cannot make it as too far from our genuine Sinkapor taste leh

The so-called Laksa is actually curry noodles and the Sinkapor frog porridge really cannot even fight with some of those other outlets opened by their local wetnamese, the one I always took at Nguyen Bieu is superb in terms of taste & prices maybe he have already tweaked to suit local tastebuds but cant say it is uniquely Sinkaporean dishes

That becos somebody died so they will be under heavy pressure to catch the culprits, if it was a simple snatch theft then the case would have just drifted into anonymity
